I have been following Nargisse on Instagram for some time now – drawn by her inspiring images and recipes that are so deeply rooted in Moroccan tradition yet have a wonderful contemporary – and accessible – feel to them.

One of my favourite dishes in Morocco is Zaalouk – an aubergine “salad” that is more of a dip than a salad really, and delicious with fresh bread! It was Nargisse’s recipe on her blog for this that inspired me to try and make it myself.
And now she has put all her wonderful recipes and inspiration together in a book!
